Its taste will conquer even the most demanding gourmet: a recipe for Georgian adjika for the winter

Adjika is a spicy, hot condiment originating from Georgian and Abkhazian cuisine. In the traditional recipe, it is a paste made exclusively from red pepper, garlic, salt, and spices.
The host of the YouTube channel Cooking with Franco and Marta shared her version of Georgian adjika.
Some variations of the recipe may include fresh cilantro and walnuts. Tomatoes, apples, carrots, or plums are sometimes added to give a sweetish flavor, although this sauce is already significantly different from the original adjika.
Due to its composition, classic Georgian adjika is perfectly preserved without losing its flavor. It can be used as an addition to a variety of sauces and dishes.
We offer you to cook authentic Georgian adjika according to a traditional recipe.
Ingredients:
- 500 g of hot red pepper
- 3 cloves of garlic
- 50 g (or 2 tablespoons) of salt
- 1 tablespoon of ground coriander
- 1 tablespoon of the "Khmeli-Suneli" mixture

The process of making authentic Georgian adjika:
- Peel the hot red peppers from the stems and place the whole pods along with the seeds in a blender bowl.
- Add 3 cloves of garlic, salt, ground coriander, and the Khmeli-Suneli mixture.
- Blend all the ingredients in a blender until a smooth paste is obtained.
- Put the mixture into clean, dry jars.
- Close the jars tightly with lids.
If properly stored in the refrigerator, this adjika can retain its properties for several months.
