Give preference to medium or small heads, as they are younger and have better flavor. Carefully inspect the cauliflower before buying: it should be clean and free of damage and traces of mold.
Store in the refrigerator:
Fresh cauliflower can be stored in the refrigerator for up to 10 days. To do this, wrap it in a paper napkin or a clean, perforated bag. Store the cauliflower in the coldest part of the refrigerator, away from fruits and berries.
Freezing:
Freezing is a great way to preserve cauliflower for the long term. It can be stored in the freezer for up to a year without losing its vitamins and flavor. You can freeze the whole head or divide it into florets.
Pre-treatment before freezing:
Pre-boil the cauliflower for a few minutes before freezing. This will help preserve its texture and color.
How to freeze properly:
Rinse the cauliflower thoroughly with water and cut it into florets. Bring water to a boil and add salt to taste. Cook the cauliflower for no more than 2 minutes. Quickly transfer it to a container of ice water for a few minutes. Put the cooked cauliflower on a towel and dry it. Arrange the florets in a single layer on a parchment-lined baking sheet and place in the freezer for several hours. When the cauliflower is frozen, put it in airtight bags or containers.
