Ciabatta at home: everyone can cook it

Ciabatta dough:
3 g of fresh pressed yeast
400 g of flour
5 g salt (1 tsp without a slide)
320 ml of water
15 ml of oil
+ flour for dusting
Mix water, yeast, and oil in a bowl.
Add the sifted flour and salt and mix the dough until smooth.
Cover the bowl with a towel and leave it for 10 hours at room temperature.
Then put the dough on a parchment sprinkled with flour. Sprinkle flour on top as well.
Shape the dough into a rectangle and cut it into two parts.
Cover with a towel and leave for 20 minutes.
Preheat the oven to 240C with a baking sheet.
Place the ciabattas on the parchment on a preheated baking sheet and bake for 18-25 minutes.
Five minutes before they are ready, turn the ciabatta upside down so that the bottom is crispy.
Baked garlic:
2 heads of garlic
Oil
Thyme
Dill, parsley
Salt.
Peel the garlic, pour oil over the cloves, add a few sprigs of thyme and bake in a 180C oven for 25-30 minutes.
Mash the baked garlic, add chopped herbs, salt.
Cut the ciabatta lengthwise, dry in the oven until golden brown at 190C.
Brush with garlic paste and bake in the oven (2-3 minutes at 220C).
