Delicious honey cake with cherry jam

HONEY CAKE
Probably each of you has ever tasted this cake.
For me, it is one of my favorites.
Ingredients for the cakes:
• Eggs — 3 pcs;
• Sugar — 150 g;
• Honey — 140 g;
• Butter — 90 g;
• Soda — 1 tsp;
• Flour — 400 g.
For the cream:
• Fatty sour cream — 500 g;
• Sugar — 150 g;
• Lemon juice — ½ pc.
For the confiture:
• Cherries — 400 g;
• Sugar — 100 g;
• Cornstarch — 1 tbsp.
For decoration, you can choose
fruits, berries, nuts, or candied fruit.
Preparation:
1. Combine eggs, sugar, honey, and butter in a saucepan. Stir, put on the fire, and bring to a boil, stirring constantly.
2. Add the baking soda and mix quickly (the mass should increase in size and lighten).
3. Remove from heat, sift in the flour, and mix well. The dough should be a little sticky.
4. Put it on a floured surface, cover it with a towel, and leave for 15 minutes.
P.S.: if the dough is too sticky after that, add a little flour and knead a soft dough (don't add too much flour to avoid clogging the dough).
5. Divide the dough into pieces, I got 8 cakes (20 cm in diameter).
6. Roll out each piece very thinly. Bake on a parchment-lined baking sheet in a preheated 180° oven for about 4-5 minutes, until golden brown.
7. Then take it out, immediately cut off the crusts, and crush them into crumbs. It is needed to sprinkle the cake.
8. Grease one cake with cream, the other with jam, and so on in turn. Sprinkle with crumbs on top.
9. Let it soak.
