Yes!!! Today we are talking about zucchini. An amazing product; a nutritionist's dream. Raw - 25 kc per 100 g. It's all about health. There are a million dishes, from appetizers to desserts, but there are no more than a dozen of the basic, most popular ones in Odesa. Let's start with the "harmful" ones - fried.
The most complicated of them is zucchini pancakes.
Grate a couple of young zucchini on a coarse grater, add salt, and leave for 5-10 minutes to let the excess juice come out. Beat a large egg with a fork, add a couple of tablespoons - half a glass of flour, a pinch of baking powder. We squeeze the grated zucchini and pour our mixture in. I add a little more finely chopped green onion. Mix everything. Fry it in vegetable oil, like regular pancakes. As an independent dish, we serve them with sour cream. But they are also good as a side dish.
It is easier and faster to cook zucchini in batter. Beat the egg a little, add a little flour, and the batter should be quite liquid. Add salt and pepper. Add finely chopped favorite herbs - dill, parsley. Stir the batter. Wash the zucchini, cut off the "butt" and the stem, cut into fairly thick slices - up to a centimeter. Dip each circle in the batter and fry in hot vegetable oil on both sides.
If you're out of batter and don't have sliced zucchini yet, or you're not going to breathe on others in the next couple of hours, you can do even easier. Simply fry the zucchini circles in hot oil until golden brown and crispy. Put them on a dish, add salt, and put a little crushed garlic on each slice. That's it! But it's better to eat it right away if you're not a fan of blue-green hues: garlic can change color in a couple of hours. They say there is nothing terrible or dangerous for health, but the normal color is still more pleasant.
"Garlic" zucchini is a very convenient thing. If you put the uneaten ones in a bowl and leave them in the refrigerator overnight, you will get a new dish in the morning - marinated zucchini in their own juice. Cold ones, as a spicy appetizer, are great.
There is another variant of fried zucchini - with garlic sauce. For the sauce, grate the garlic on the smallest grater or pass it through a garlic press, add a pinch of salt and sugar, a teaspoon of vegetable oil, and rub the mass with a spoon or pestle. Add cold water a teaspoon at a time and continue to rub until the sauce looks like a translucent emulsion. That's it! There are two options left: brush the fried zucchini with the sauce or simply pick up a slice with a fork and dip it in the sauce. A serious choice...
